Summary

To develop recipe ideas for the CLIMAVORE Network, Cooking Sections are working with Highlands College students on the NCFE Progression Diplomas in Culinary Arts and the Advanced Technical Diploma in Professional Cookery. JP Restaurants have kindly offered to help cover the costs of the sessions at Highlands College.

A low tide field trip with Kazz Padder to collect seaweeds and visit the oyster farms was followed by a practical session at Highlands College with Cooking Sections and Dominic Farrell, to prepare four CLIMAVORE recipes and share ideas for the public event in February.

We hope that students will go on to develop their ideas with some of the islands most exciting chefs and specialist cooks, while gaining knowledge of locally available foods and an appreciation for the potential positive impact their future careers might have on the environment and farming practices.
