Summary

To develop recipe ideas for the CLIMAVORE Network, Cooking Sections are working with Highlands College students on the NCFE Progression Diplomas in Culinary Arts and the Advanced Technical Diploma in Professional Cookery. JP Restaurants have kindly offered to help cover the costs of the sessions at Highlands College.

A low tide field trip with Kazz Padidar to collect seaweeds and visit the oyster farms was followed by a practical session at Highlands College with Cooking Sections and Dominic Farrell.

We hope that students will go on to develop their own ideas with some of the islands most exciting chefs and specialist cooks, while developing an appreciation for locally available foods and the positive impact their future careers can have on the environment.
