Project summary

While investigating the import and export of food in the local context, artist Jonathan Trayte will design and create an extraordinary sculptural ice cream parlor, to showcase and share a limited edition of far-flung flavours. In collaboration with local dairies he will engineer enticing flavours that map the sales of Jersey Milk to destinations around the world. Each flavour will represent an export destination, such as Hong Kong, South Korea, Japan or Spain; Black sesame and red bean, Sake and cherry blossom, Seville marmalade and caramalised creams.

The ice cream parlor will travel across the island, visiting places of historical significance to the dairy industry, as well as urban residential areas that may not otherwise engage with the rural economy. As a temporary research hub and meeting place, it will provide an opportunity to consider and discuss the legacy of Jersey milk and its reputation as a product sold throughout the world, the politics of global trade and the complexities of our evolving agricultural systems.
